Vegetarian split pea soup

I have been searching the web for good, tasty vegetarian recipes. Tonight I am making an easy one:  Slow cooker split pea soup.

Here is the recipe I used:


1 (16-oz) package dried green split peas, rinsed 
3 carrots, sliced 
1 large onion, chopped 
3 cloves garlic, put thru garlic press 
1 bay leaf 
freshly ground black pepper 
4 cups water 
2 cups vegetable broth 

Saute onion and carrots in a little olive oil til soft. Then, layer  ingredients in slow cooker in the order given; pour in water and broth. Do not stir ingredients. Cover and cook on HIGH 4 to 5 hours or on low 8 to 10 hours until peas are very soft. Remove bay leaf. Mash peas to thicken more, if desired. Serve garnished with croutons, or with crusty bread  Freezes well.

Serves 8.
